My First Giveaway and a Recipe: Mini Veggie Garlic Chive Feta Pizza

My First Giveaway

Earlier, I wrote about the healthy diet in Greece, Crete and southern Italy and the healthy, award-winning pita chips, salad and salsa we sampled from Cedar's Mediterranean Foods. Recipe: Mini Veggie Garlic Chive Feta Pizza
     3-6 English muffins, sliced in 1/2
     olive oil spray
     4 Tbsp tomato paste
     1/4 cup mushrooms, sliced
     1/4 cup Vidalia onions, sliced
     1/2 cup spinach, torn up
     1/4 cup Cedar's Garlic and Chive Feta Spread
     1/4 cup shredded cheese
     salt and  pepper

Preheat oven to 400 degrees F.

Spray olive oil over English muffin halves then spread tomato paste evenly.  Spoon Garlic and Chive Feta Spread over the surface.  Add mushrooms, onions, spinach and shredded cheese, as much or as little as you want. Sprinkle salt and pepper. Bake 20-25 minutes, or until cheese is melted and crust is lightly browned.

The mini pizzas sound excellent with feta! I love all kinds of Mediterranean style dishes, I think the one we eat a lot is a Greek pasta.

that is my favorite brand for hummus and feta cheese! This pizza sounds and looks great. Oh my son is going to kill me when I suggest pizza again this week :)

Don't think I've ever seen a combo like this for pizza! I like chicken or some sort of meat on my pizza's as well. Perhaps some sausage might be good with that combo.

Your mini pizza looks delicious with the combination of the flavors that you have on it :-) My favorite Mediterranean dish? I don't know if you can call a dish is hummus, which we snack on it all the time with veggies or crackers ;-)

What a great giveaway! I think of fresh wonderfully tasting produce like tomatoes, basil and garlic, I also think of fresh fish like sardines, and dorade. The Tzatziki looks good!

The giveaway sounds wonderful! My favorite Mediterranean dishes are souvlaki and gyros, but really I'll eat anything. I'm thinking Tzatiki for me, maybe the roasted veggie or the spicy hot...I can't decide ;)

Yum! I love Cedar's hummus and would love to try their roasted corn salad! I hate to say it, but my favorite Greek dish is baklava, so much for healthy eating! :)

These mini pizzas sound delicious! I love how they can be thrown together at a moment's notice. The Mediterranean diet is the way to go. Some of my favorite things are falafel and spanikopita. And pasta of course - in any variety.
