Kid-friendly Mojito

Last week, the Farmers Market had lots of fresh mint leaves sold for a just a dollar a bunch.  I thought they'd be perfect with grilled salmon and mojito. Since my son is still too young to drink alcoholic beverages, I decided to make the mojito kid-friendly.  He was out playing basketball all afternoon when I called him in for dinner.  As he was digging into the salmon, I brought out the kid-friendly mojito made with 7-Up mixed with lots of mint, lemon and lime crushed in my trusted Japanese suribachi to extract the flavors (if you don't have one, you can use a regular mortar and pestle), a drop of Stevia as sweetener and lots of ice.  He thought it was amazing....he even begged me for the recipe!

I've been growing Stevia for the past three years and it has become my all-time favorite herb for offsetting sharpness in tomato dishes etc... for drinks, I just crush the leaves a bit and let them infuse the drink... like the idea of the drops, though... what a clever drink... come visit when you can

I've long wanted one of those Japanese pestles and have lots of mint in the backyard. We also have a yuzu tree not yet producing. I can't wait to be able to make drinks like this from the yard soon! Thanks for linking in to Simple Lives Thursday!

I've made one that was similar with lime sparkling water and a squeeze of lime. A small amount of honey or stevia for sweetener, and I'm set!

This is the cutest idea!! When I was young my parents would give me a'gin & tonic' sometimes...really just tonic water with a lime, but I loved it!

Your mojito sounds lovely and refreshing- I love mint! I've never used stevia, but I've heard it's wonderful. Lately I've been using agave nectar to sweeten things. Lemonade based drinks have to be my favorites as well- watermelon, strawberry, cherry are all yummy additions to it. Thanks!

Just perfect for me! I don't drink so a mojito without alcohol sounds so refreshing. This reminds me too - my husband loves Mojitos - now if we are out at a bar I can try and order a non-alcoholic one. If they tell me they don't know how to make it I'll just point them to your blog. Haha!
